Tasting Note: Very fruit-driven on the nose with hints of tropical fruits and floral notes. Showing good weight in the mouth, smooth mouth-feel and a similar fruit character with fresh acidity.
Vinification: Bunches are destemmed and crushed in the pneumatic press. The must is pressed and cooled (with adjustments to acidity and SO2 to avoid oxidation) then placed in stainless steel tanks at 5ΒΊC. After 48 hours the must is fined and fermented with selected yeasts at 12ΒΊC for 12 days, then clarified.

Vinification Process: Pre-ferment maceration for 72 hours, followed by fermentation in barrels and stainless steel tanks, with overall maceration processes lasting between 15 and 24 days. Temperature fermentation does not go above 25Β°C. Aged 18 months in 225-litre French oak barrels, with 80% of the wine being aged in new barrels.

Vinification Process: Arid desert like growing environment in Lavalle with wide diurnal temperature range. 30-year-old pergola trained vines, planted on French rootstock with traditional flood irrigation. Re-grafted with Garnacha in 2018. Organically managed (uncertified). Manual harvest. This wine is made using the carbonic maceration technique: the initial fermentation is not caused by yeast, but instead occurs intracellularly, or from the inside out. This method involves filling a sealed vessel with carbon dioxide and then adding whole, intact bunches of grapes. This technique favours light- to medium-bodied red wines with a bright primary fruit expression and soft tannins. Alcoholic fermentation occurs at low temperature with native yeasts. No malolactic fermentation. No oak aging.

Vinification Process:Manual sorting of bunches and berries. Fermentation begins immediately in concrete eggs with selected yeasts to avoid oxidation. Alcoholic and malolactic fermentation takes place within 25 days, with very gentle pumpovers the first week. Once the fermentation is finished, the wine is racked and pressed, always privileging the freshness and fruit over the extraction. No oak ageing and no use of SO2.

The Cot was fermented in concrete tank before transfer to French first use oak barrels for the Malolactic fermentation and ageing. Aged 24 months in new French oak.

Elegant yet robust, rich yet nuanced and with a long and expansive finish this is a true celebration of the old vine heritage of the Owen vineyard.
Vinification: A cold maceration is carried out for 3-5 days before the fermentation with indigenous yeasts begins achieving 26-27Β°C. Depending on vintage, a postfermentation maceration is carried out for between 3 and 5 days, achieving a total time on skins between 25-30 days, seeking concentration yet balance in extraction. Malolactic fermentation in barrel.

The fuller bodied palate is elegant with firm tannins but a balancing acidity. Cedar notes show from the use of French oak and the finish is dominated by bright red fruit

Vinification Process: La Freneza translates as β€˜the madman’ in Esperanto. The grapes for this wine come from 60% of the town of Mainque and 40% of San Patricio del ChaΓ±ar. The harvest is done by hand in boxes of 20 kg. Fermentation takes place with 25% whole bunches, at a temperature of 25 to 28 degrees. Only very soft pisonages and remontages for polyphenol extraction, the maceration lasts 12 days. The malolactic fermentation takes place in used 80% and new 20% barrels, 100% French. The wine rests in the same barrels for 10 months before being bottled.

Food Match: Great with seafood, including oily and fried fish, cheeseboards and charcuterie. Works particularly well with spicy cuisines such as Thai, Vietnamese and Mexican.
