Vinification: Hand harvest with manual selection of bunches. Grapes sourced from low yielding vines, selected for their quality potential and overall balance. After destemming, whole grapes are pressed with natural yeasts. Fermentation takes place at low temperatures to retain maximum aromatic expression.
